With this delicious, healthy and flavour-rich poha recipe, you are up for a treat! Rinse and drain 1 ½ cup poha and set aside. Finely chop 2 medium-sized onions, 1 green chilli and 2 medium tomatoes. Prepare 2 tbsp chopped green capsicum, 2 tbsp chopped carrot, 2 tbsp frozen peas and 2 tbsp chopped coriander leaves. Now, heat a pan and crackle 1 tbsp mustard seeds and 10-12 curry leaves in 1 tbsp oil. Then add 2 tbsp peanuts and let them roast. When a pleasant aroma comes out, start adding the veggies one by one, letting them cook for 2 minutes on medium-low flame before adding the next one. When the vegetables reduce a little, add 1 tsp salt, ¼ tsp chilli powder, ¼ tsp turmeric powder and mix well. Lower the flame, add the washed poha and give everything a good mix.
